Black Teas
The variations are numerous and the quality range is vast. The finest black teas are full-leaf varietals that undergo laborious processing, hand-rolling against bamboo trays as many as three to four hundred times in order to achieve the right amount of oxidation. With their extensive processing and longer fermentation, black teas are far different chemically than whites, greens, or oolongs. 46 Organic Avongrove Estate Avongrove Estate is a high elevation estate located above 2200 feet and rising up to 5800 feet elevation. This particular tea is very delicate muscatel tea that produces light golden clear liquor with sweet fruity aroma. The green infusion is full of tips indicating the delicate nature of the leaf. I particularly like the light jasmine aroma wafting from the cup of this tea which has ever so light astringency on the palate. In fact the infusion after a couple of steeps would be perfect for adding to your bread machine to bake "Tea bread"!

47 Organic Makaibari Estate This Darjeeling was grown 4,500 feet above sea level on the renowned Makaibari Estate. This harvest is unique, lighter than most black teas with a flavor complexity that makes goods ones sought after worldwide. Castleton produces 15,000 pounds of tea each year making it one of the top producers in Darjeeling. Considered the most prestigious of all black teas, this second flush Darjeeling from Castleton produces a much more complex cup than its first flush varieties.
